Comprehensive list and timeline of what's in season for spring
To me, the true new year begins in spring. Sure, when the ball drops and confetti falls there is of course a collective moment of celebration as we pin up a new calendar, but the natural world is still very much asleep. Deciduous trees lay dormant, leaves dried, dropped, and scattered - animals tucked into burrows and caves. It isn’t until the first tendrils of green poke through the thawed ground that I feel the year is officially underway.

Throughout my life, spring remains a pivotal season. There have been many life-shifting moments that have taken place amidst the flowers budding and blooming, and I can’t help but look forward to it every single year. So to help you also look forward to this thrilling season, here’s what to expect and when:
Early spring - Mid-March to Early April
*Available in warmer climate or tropical regions
Alliums - spring onions, red onions, green garlic
Leafy greens - kale, collard greens, spinach, chard, chrysanthemum, bok choy, mustard greens, various lettuces
Foraged - ramps, stinging nettles, dandelions (greens, flowers, and roots), sorrel, onion grass
Herbs - oregano, mint, chives, cilantro
Roots - red radishes, breakfast radishes, hakurei turnips
Fruit - lemons*, limes*, loquats*, cherimoya*
Mid-spring - Mid-April to Early May
Stalks - asparagus (green and white), rhubarb
Foraged - morels, oyster mushrooms, spruce tips
Roots - fennel, turnips, red onions, carrots
Fruits - green strawberries, avocado*
Late-spring - Mid-May to Early June
Legumes - fava beans, green peas, green chickpeas, sugar snap peas, snow peas
Greens - arugula, nasturtium (and flowers)
Heads - cabbage, broccoli, cauliflower, kohlrabi
Stalks - garlic scapes, artichokes, fiddleheads
Vines - baby squash, squash blossoms
Fruits - strawberries, mango*, kiwi*
